Vineyard and terroir
The selected fruit is grown on sandy-calcareous and clayey soils. Casaloste’s vineyards, near Florence in Chianti Classico, are cultivated organically. Biological pest control maintains harmful species below economically damaging levels by supporting beneficial insects, fungi and viruses. The estate follows a low-yield policy and monitors grape quality continuously.
Vinification
The grapes are hand-picked into small crates, sorted twice and destemmed. Fermentation with selected yeasts lasts 3–4 weeks, depending on the vintage, in small stainless-steel tanks at a controlled temperature. Malolactic fermentation begins immediately afterwards at 20–23 °C.
Ageing
The wine rests for 16 months in French oak barrels from Allier; 30% are new and 70% are one year old.
Label / history
The name refers to situs inversus, a rare congenital condition in which the internal organs are arranged as a mirror image of their usual positions. Federico d'Orsi, the second son of Emilia and Giovanni, was born with the condition, and his fingerprint appears on the label. Giovanni Battista d'Orsi and his wife, Emilia, founded Fattoria Casaloste in 1992. The estate has 10.5 hectares of vineyards and produces 60,000 bottles annually.
