Vineyard and terroir
The selected fruit comes from a small vineyard in Chianti Classico. Casaloste manages its vineyards organically and uses biological pest control, supporting beneficial insects, fungi and viruses to keep harmful species below economically damaging levels rather than eliminating them completely. The estate’s approach includes low yields per hectare and continuous monitoring of grape quality.
Grapes
The wine is made from a selection of Sangiovese grapes.
Vinification
Fermentation takes place in temperature-controlled stainless-steel tanks. Giovanni Battista d’Orsi personally oversees production from harvest onward, with fermentation kept under continuous supervision.
Ageing
The wine matures for 14 months in French oak barriques and barrels, followed by five months in bottle in the winery’s cellars. Barrel ageing is supervised continuously. The estate favours French oak for the strength and elegance it brings to its Chianti Classico wines.
Label / history
Fattoria Casaloste was founded in 1992 by Giovanni Battista d’Orsi and his wife, Emilia. The estate is near Florence and comprises 10.5 hectares of vineyards and an olive grove. It produces approximately 60,000 bottles annually. The winery’s oenologist is Gabriella Tani.
