Vineyard and terroir
The selected fruit comes from a small vineyard in Chianti Classico. The naturally secluded Casaloste estate lies near Florence and comprises 10.5 hectares of vineyards alongside an olive grove. Its vineyards are farmed organically, with biological pest control used to keep harmful species below economically damaging levels by supporting beneficial insects, fungi and viruses. Giovanni Battista d'Orsi maintains low yields per hectare and continually checks grape quality.
Grapes
The Sangiovese grapes are selected.
Vinification
Fermentation takes place in temperature-controlled stainless-steel tanks and is closely monitored. Giovanni Battista d'Orsi personally oversees the process from harvest onward, working with oenologist Gabriella Tani.
Ageing
The wine rests for 12 months in French oak casks with capacities of 25 and 35 hectolitres. Giovanni Battista d'Orsi also personally oversees barrel ageing.

Spicy in character, with rich aromas of cherry and plum.
Label / history
Giovanni Battista d'Orsi and his wife, Emilia, founded Fattoria Casaloste in 1992 to pursue Giovanni's long-held ambition of organic farming. The estate produces 60,000 bottles annually.
