Vineyard and terroir
The grapes are grown in Chianti and harvested at optimum ripeness.
Grapes
Selected Sangiovese forms the base, with small amounts of Canaiolo and Ciliegiolo.
Vinification
The grapes are carefully selected, destemmed and pressed. Vinification takes place in stainless steel tanks at a controlled temperature of 20–25 °C and includes a long maceration. Fermentation lasts around 12 days, after which the must stays in contact with the fermenting juice for a little longer. Once malolactic fermentation is complete, the wine is cold-stabilized.
Ageing
The wine is bottled in the spring of the year following the harvest.
Label / history
The "Baffo Rosso" wines are a tribute from the current owner, Piergiorgio, to his grandfather Umberto, who laid the foundations of the business and was known for his impressive moustache. The red moustache on the labels represents the company's commitment to quality and celebrates Umberto.
