Questo vino
Lo Scarlatto di Umberto combines Lambrusco di Sorbara with traditional-method sparkling-wine production. Its name, literally “Umberto’s Scarlet,” honours both its territory and the winery’s founder.
Vineyard and terroir
The grapes come from vineyards in the heart of the Sorbara D.O.C., around the Secchia and Panaro rivers.

100% Lambrusco di Sorbara.
Vinification
The grapes are harvested by hand, gently pressed and macerated with their skins for 2–3 days. The extracted must is divided into qualitatively homogeneous fractions, ranging from the finer, more organoleptically rich first portion to the final fraction, which carries more colour and aroma. These lots ferment separately before selected portions are blended to form the cuvée. Secondary fermentation then takes place in bottle by the traditional method.
Ageing
The wine remains on its lees in bottle for 18 months.

Alcohol: 12% vol. Residual sugar: 12 g/L. Bottle size: 750 ml.
Tasting profile
Bright, light ruby red with scarlet reflections, a full pink mousse and elegant, persistent perlage. The bouquet is direct and elegant, with red fruit, black cherry, cherry and spicy nuances. Airy on entry, the palate becomes decisive, showing red-fruit notes and the grape’s vibrant yet harmonious acidity. The wine has sufficient balance and structure to accompany a range of dishes.
Serving and pairing
Serve at 8–10°C. Pair with first courses dressed with white-meat ragù, risottos, white meat and grilled fish.
Label / history
The wine is conceived as a tribute to the Sorbara territory and terroir and to Umberto Cavicchioli, the winery’s founder. The name translates as “Umberto’s Scarlet.”
