Vineyard and terroir

Alzari is produced exclusively from the estate-owned Alzari Alti and Alzari Bassi vineyards in Castelcerino, in the historic Soave Classico zone. Both sites lie at 150 m above sea level.

Grapes

100% Garganega. Certified organic wine.

Vinification

Harvest takes place entirely by hand throughout October. Several vineyard passes allow selection of the ripest bunches, which are carried in 20 kg crates to preserve them intact until pressing. Sixty percent of the fruit is fermented immediately. The remaining 40% undergoes approximately 40 days of appassimento in the fruttaio, concentrating sugar and flavour, and is then fermented.

Ageing

The wine matures in 1,500 L oak barrels. The detailed production description gives a period of 10 months, while the introductory presentation gives a range of 10–12 months. After bottling, it rests for a further couple of months before release.

Tasting profile

Deep yellow with golden highlights. The bouquet develops gradually in the glass: broom, thyme, mountain herbs, green tea and mineral notes lead into nectarine, yellow peach, ripe Williams pear, dried fruit, toasted nuts and honey. Dry and enveloping, the palate combines volume and softness with distinct saltiness. It is harmonious and balanced, with good structure and a long, persistent finish.

Serving and pairing

Serve at 11–12°C and uncork a few minutes beforehand. Pair with substantial soups, aromatic medium-aged cheeses or dark meat, such as guinea hen served with a hot or spiced sauce.
