Vineyard and terroir
The Garganega comes exclusively from estate-owned hillside vineyards in Castelcerino, in the historic Soave Classico zone, at 150–450 m above sea level. The vineyards are harvested in several passes so that only ripe bunches are selected.
Grapes
100% Garganega. Certified organic wine.
Vinification
Harvest takes place entirely by hand throughout October. The bunches are placed in 20 kg crates to preserve their integrity until pressing. Fermentation is conducted below 18°C to retain Garganega’s finer aromas. The wine is racked only once and receives one gentle filtration.
Ageing
Maturation takes place in small stainless-steel tanks maintained below 16°C.

Tasting profile
Brilliant straw yellow, with green highlights when young. The fresh, restrained bouquet recalls hawthorn, lily of the valley and cherry blossom, followed by green apple, white plum, sage and mineral nuances. Dry, streamlined and refreshing on the palate, with good balance, structure and savoury persistence. The long finish carries an attractive almond note. Youthful directness and persistence gradually develop into greater complexity and minerality with age.
Serving and pairing
Serve at 9–10°C. Suitable as an aperitif and with fish, shellfish or delicate pasta dishes, particularly asparagus or pea risotto.
