Vinification
Glera grapes are harvested by hand from 15 to 30 September and gently pressed. The juice is separated from the skins, then undergoes primary fermentation for 30–40 days under strict temperature control. Secondary fermentation follows in large sealed stainless-steel tanks using the Charmat method.
