Vineyard and terroir
The estate vineyard lies at the top of the hill crowned by San Salvatore Castle. Its soils are relatively stony, and it is continually exposed to cooling breezes.
Grapes
Glera forms the basis of the blend, supplemented by small amounts of the native varieties Verdiso and Bianchetta.
Vinification
The grapes are usually harvested between 1 and 10 September using traditional, gentle techniques. They are softly pressed, after which the must is settled statically and fermented in temperature-controlled tanks at approximately 18 °C.
The wine is produced by the Charmat-Martinotti method. During the secondary fermentation, the base wine ferments with sugar and selected yeasts for four months in pressurised steel tanks. This process preserves the grapes’ natural aromas and develops fruit and floral notes.
Ageing
The wine rests on its fine lees in steel tanks for three to six months. It is then filtered and bottled before spending a further one to two months in the winery cellar.

Label / history
The wine takes its name from the hill crowned by San Salvatore Castle. The Counts of Collalto created it to celebrate the traditional end-of-season festivities held at the castle.
It received gold at AWC Vienna in 2022, silver at IWSC in 2023 and AWC Vienna in 2022, bronze at the Decanter World Wine Awards in 2022, and a Falstaff Prosecco Trophy award in both 2022 and 2023.
