Vineyard and terroir

Molera is made from pure Glera grown in carefully selected vineyards within the denomination. The shallow morainic soils allow vine roots to approach ancient, thin layers of calcareous rock. The grapes ripen with ample solar exposure, combining the floral register of Valdobbiadene with the fruit-led character of the area toward San Pietro di Feletto. Vineyard aspects include south, east and west. Vines are trained using the doppio capovolto system, and grapes are picked by hand into bins at the end of September.

Vinification

Secondary fermentation lasts 30 days. The wine is conceived as a distinctive Extra Dry rather than simply a sparkling base adjusted through sugar dosage—a white wine expressed through bubbles.

Alcohol: 11.5% vol. Total acidity: 5.55 g/L. Residual sugar: 15 g/L.

Tasting profile

Pale straw yellow with subtle golden reflections. Ripe citrus, yellow apple and white flowers are complemented by a suggestion of aromatic herbs. Soft, delicate and enveloping, the palate remains balanced by pronounced freshness, while a savory finish extends its persistence. Its silky profile follows the denomination’s traditional Extra Dry style.

Serving and pairing

Suitable as an aperitif and throughout a meal. Serve at 6–8 °C in a glass combining the narrower shape of a flute with the broader aromatic chamber of a tulip. It is intended for youthful drinking and shows best 12–24 months after bottling; its initially fruity aromas grow riper and more vinous with time. Store in a dark, cool and dry place at 12–15 °C, upright during the first year and optionally horizontally thereafter.
