Vineyard and terroir
The grapes come from the highest hillside plots, which have the best sun exposure and allow the berries to reach maximum phenolic ripeness. In Friulian dialect "Dal Pic" means "from the top". Collio's soils are flysch, locally called ponca, with alternating layers of mineral-rich marl and sandstone. They drain well and give the wine a subtle mineral complexity. The nearby Adriatic Sea and the shelter of the Alps create a moderate microclimate with marked differences between day and night temperatures. This slows ripening and lets the Merlot develop complex aromas, while the wine keeps enough freshness to balance its richness and alcohol.
Vinification
The wine is made by the appassimento method. After harvest the bunches are placed in special crates in a ventilated room with controlled humidity, where the grapes dry slightly. As excess moisture evaporates, sugars, tannins and aromatic compounds concentrate, giving a fuller body and richer flavour. Skin maceration lasts 20 days, for deep colour.
Ageing
The wine matures for 24 months in French oak barriques from Allier and Tronçais, which softens the tannins and adds notes of spice and liqueur. It then rests in bottle for a further two years so that its elements come together harmoniously.
Tasting profile
Refined and velvety, with a rich, enveloping texture, deep structure and concentrated fruit. Oak ageing adds spice and liqueur notes. The finish is lingering and spicy.

Suited to meat dishes, in cooler weather.
