Vineyard and terroir
The grapes come from Colli Orientali del Friuli, in northeastern Italy, where Schioppettino is traditionally grown.
Vinification
The grapes are harvested late, in late September or early October. They are then dried for about three weeks in a specially equipped room, which concentrates their qualities and gives the wine a more expressive character. At the winery they are gently pressed, and the must ferments in stainless steel tanks at a controlled temperature.
Ageing
The wine ages for eighteen months in barriques of French Allier oak, followed by a further eighteen months in bottle in the cellars. This gives it a harmonious character.
