Vineyard and terroir

Macerato comes from the Stracacio vineyard in Contrada Spescia, Cupramontana, beside the Gaiospino vineyard. The site lies at 350 m a.s.l., faces north-west and consists predominantly of calcareous marl. It was planted in 2003.

Spontaneous grass cover is maintained without fertilisation. The vines are manually pruned to single Guyot, while management beneath the rows combines manual and mechanical work.

Vinification

Ripening within the vineyard is markedly uneven. Harvest takes place when a suitable balance is reached between bunches that remain slightly underripe and others already tending towards raisining. The grapes are destemmed and crushed, then ferment spontaneously with five days of skin contact. After removal of the skins, fermentation finishes in concrete.

Ageing

The wine remains exclusively in concrete on its fine lees for 24 months, followed by 18 months in bottle. The concrete maturation takes place in a deliberately oxidative environment. Total sulphites in the bottled wine are 30 mg/L.

Tasting profile

The pronounced oxidative character sets Macerato apart from Stracacio despite their shared raw material. The nose offers vivid medicinal herbs, a delicate trail of spices and caramelised notes toward the finish.

The palate opens with a rich, broad texture before extending into restrained savouriness. Spices, acacia honey and barley malt are followed by herbal and balsamic flavours. It is intense and warm, finishing cleanly with a delicate tannic touch. Its substantial, complex profile develops progressively in the glass, with a subtly sweet-textured impression.

Serving and pairing

Pair with substantial dishes such as white hare or goose ragù, or with complex, spiced preparations such as egg with asparagus and truffle. Washed-rind cheeses are another option, and the wine can also be enjoyed on its own. Its ageing potential is at least five years.
