Grapes
Garganega and Trebbiano di Soave. The variety fields list Verdicchio, but the description names Trebbiano di Soave as the second grape.
Vinification
The grapes are harvested by hand from late September to early October. At the winery they are crushed, destemmed and gently pressed. The must stays in contact with the skins overnight at around 14 °C for cold maceration, which lets it take up the skins' aromatic compounds. Alcoholic fermentation takes place in temperature-controlled steel tanks.
Ageing
The wine ages on fine lees for almost 2 months, with continuous stirring to improve texture and bouquet. After bottling it rests for one month before release, so that its aromas can develop.
Tasting profile
A classic Soave with a modern take on the traditional floral character of the local grapes, and the region's distinctive minerality. The aroma is distinctive, with notes of flowers, exotic fruit and rosemary. The wine is simple, very light and enjoyable.
Serving and pairing
Suited to aperitif, seafood, Asian dishes and vegetables.
