Vineyard and terroir
The fruit comes from estate vineyards in Soave, on the hills of Castelcerino. The vineyard lies at 350 metres above sea level with a south-eastern exposure. Soils are volcanic, layered with tuff. Planting density is 3,000 vines per hectare; the average age of the vines and this density contribute to the concentration and character of the grapes.
Vinification
The grapes are harvested by hand at the end of October, a late harvest that preserves freshness. They are gently destemmed and undergo cryomaceration in the presses, then are softly pressed. Fermentation takes place in stainless-steel tanks at a controlled temperature of around 13 °C.
Ageing
Part of the wine is aged on fine lees for 6 months, mainly in stainless-steel tanks and partly in small oak barrels, which gives a soft, elegant structure. After bottling it spends several more months in the cellar, developing harmony and fullness.
Tasting profile
An elegant, distinctive and expressive Soave that feels light and graceful. The structure is harmonious and the wine shows full maturity, giving a complete, balanced impression.
