Vineyard and terroir
Cupano’s 3.7 ha of estate vineyards lie among hills beside the Ombrone River, south of Siena, at 200 m above sea level. The soils are rich in minerals. Yields are kept low, and only organic fertilisers are used.
Grapes
The local form of Sangiovese is known as Brunello or Sangiovese Grosso. The Grosso name arose from Ferruccio Biondi-Santi’s selection of vines for reliable yields and greater resistance to phylloxera.
Vinification
The grapes are harvested by hand and carefully selected on a sorting table. Fermentation on the lees takes place in new French oak barrels.
Ageing
Wines bearing the Brunello di Montalcino name must spend at least two years in wooden barrels, followed by approximately four months in bottle.
Label / history
“Brunello” means “good dark one.” Brunello di Montalcino developed from research begun by Clemente Santi in the second half of the 19th century and continued by his grandson, Ferruccio Biondi-Santi, who subsequently began producing wine from Sangiovese Grosso.
