Vineyard and terroir
Cupano lies among the hills beside the Ombrone River, south of Siena. Its own vineyards cover 3.7 hectares at an altitude of 200 metres, with mineral-rich soils. Yields are kept low, and only organic fertilisers are used.
Vinification
The grapes are harvested by hand and carefully selected on a sorting table. Fermentation on the lees traditionally takes place in new French oak barrels.
Ageing
The wine spends around six months in wooden barrels, followed by approximately six months in bottle before release.
Tasting profile
It has a lighter, fresher style than Brunello di Montalcino.
