Vineyard and terroir
The Cabernet Sauvignon comes from the Le Ronche estate in Fossalta di Piave. Le Ronche is the name of the area where the vineyards lie, 10 km from the Adriatic Sea and 50 km from the Dolomites. The soil is mainly alluvial, known as caranto, and consists of white clay and dolomitic deposits. The climate is mild, with little rainfall and summer temperatures that support excellent ripening. The vineyards were planted between 1986 and 2009, and the fruit is taken from old vines.
Shoots are carefully pruned and leaves gently removed so the grapes ripen evenly. Yields are kept very low. The estate now uses only organic methods. Vines are pruned short, a green harvest is carried out every year, and there is no irrigation.
Vinification
The grapes are harvested in late September at full ripeness. After destemming and crushing, the must is macerated and fermented at controlled temperature in concrete tanks, with frequent pumping over. The concrete preserves the wine's natural character and gives it a soft texture. The wine is then racked, and alcoholic fermentation is completed in stainless-steel tanks.
Ageing
The wine ages on the lees in barriques and oak barrels for 8–12 months. Bottles should be stored horizontally in a cool, dark place. The wine can continue to improve in bottle and is expected to reach its peak 10 years after the harvest.
Tasting profile
Deep ruby-red. Fruity aroma. The structure is complex, with fruit and spice notes, a soft texture and a balanced style.
Serving and pairing
Pairs especially well with Mediterranean dishes and meat.
