Questo vino
Vineyard and terroir
The wine is produced in the Piave Valley, 10 km from the Adriatic Sea and 50 km from the Dolomite Alps. The soil is alluvial "caranto", made up of white clay and Dolomite deposits. The climate is mild, with little rainfall and comfortable summer temperatures, which helps the grapes ripen well. Shoots are carefully pruned to support healthy vine growth, and yields are kept very low to give grapes with distinctive aromas and flavours. The estate uses only organic methods, prunes the vines short, carries out green harvesting every year and uses no irrigation.
Vinification
The grapes are harvested in early September, at excellent ripeness with good acidity retained. The whole grapes are gently pressed and the must undergoes cold maceration to develop flavour and aroma. Fermentation takes place in concrete tanks under constant temperature control, giving a young wine with a smooth texture.
Ageing
The wine rests on its lees for several months in stainless steel tanks. The lees are stirred frequently to give more body and softness. After bottling it should be stored horizontally in a cool, dark place. It reaches its peak 7 years after the harvest.
Tasting profile
Elegant, with freshness and a pleasant mineral character. The nose is delicate, with white flowers and juicy ripe apricot. The texture is smooth and soft.
Serving and pairing
Suited to traditional Italian dishes.
