Vineyard and terroir
The vineyards lie on clay soils between the sea and the mountains, where they benefit from good ventilation. They are farmed organically without irrigation. Short pruning and annual green harvesting produce low yields.
Vinification
The grapes are harvested by hand in September when fully ripe but still retaining good acidity. After destemming and crushing, the juice remains briefly in contact with the skins to develop greater aromatic and flavour intensity. Fermentation takes place in temperature-controlled stainless-steel tanks.
Ageing
The wine remains on its lees in the same stainless-steel tanks for several months, with regular bâtonnage contributing smoothness.
Tasting profile
The aroma is delicate yet rich. The wine is intensely flavoured, with a broad, smooth and lingering palate.
Label / history
De Stefani has grown Pinot Grigio for more than 50 years. The family has cultivated vines and made wine for four generations.
