Vineyard and terroir
The estate uses organic methods, short pruning and annual green harvesting. The vines are not irrigated, and yields are kept low.
Vinification
The grapes are harvested in late September or early October at good ripeness, then carefully selected and dried for several months. Once the required degree of natural drying has been reached, they are destemmed. Maceration and fermentation begin together in 225-litre barriques using integral vinification. After racking, fermentation continues in small oak barrels.
Ageing
The wine remains in small oak barrels for about 24 months, followed by a further 18 months in bottle.
Tasting profile
The aroma is rich in ripe fruit, with elegant notes of violet, leather and vanilla.
Serving and pairing
Pair with meat dishes or aged cheeses.
