Vineyard and terroir
The fruit comes from the Le Ronche estate in Fossalta di Piave. Its predominantly alluvial soils combine white clay with minerals originating in the Dolomites. The vineyards are farmed organically without irrigation; the vines are short-pruned, and a green harvest is carried out each year to maintain very low yields.
Vinification
The grapes are harvested in the first half of September when ripe but still retaining good acidity. Whole bunches are gently pressed, followed by cool static clarification and fermentation in temperature-controlled steel tanks.
Ageing
The wine remains on its lees for several months in temperature-controlled steel tanks. Regular stirring of the lees builds texture and body.
Tasting profile
Highly aromatic, structured and complex, with a smooth texture.
Label / history
The name pays tribute to the Venetian merchants who, during lavish 18th-century banquets, discovered the affinity between Sauvignon Blanc’s exotic character and local dishes.
