Vineyard and terroir
The Chardonnay grows in Fossalta di Piave and Monastier di Treviso. Besides regular vineyard care, the winery uses summer pruning and careful leaf thinning so the grapes reach ideal ripeness, and yields are kept very low for grapes of rich flavour and aroma.
The estate uses only organic methods: the vines are pruned short, a green harvest is carried out every year, and no irrigation is used. The result is low yields of very high-quality grapes.
Vinification
The grapes are harvested in early September, destemmed and crushed, then gently pressed. The must is clarified by static settling. Fermentation is at controlled temperature, giving a young wine with natural flavour and smooth texture.
Ageing
The wine ages for several months in oak barrels on fine lees, with regular stirring to add depth and harmony.
Tasting profile
Fruity and citrus notes typical of the variety, with a smooth texture.
Label / history
The name comes from the Latin "vitalis", meaning "vital" or "full of life". Since 2004 "Vitalys" has been the official wine of the Wimbledon Tennis Tournament. The De Stefani family has grown vines and made wine for four generations, and the estate has expanded considerably over the years.
