Tasting profile

Powder pink, with gentle bubbles. The bouquet evokes winter fruit, particularly fresh mandarin, redcurrant and crisp, sweet pear. The palate is balanced and approachable, retaining its poise through the finish.

Serving and pairing

Serve at 6–8°C. Cellaring potential is 1–3 years. It can be enjoyed alone or with appetisers based on cured meats, vegetables and seafood, as well as Asian-inspired dishes. Suggested combinations include prosciutto omelette, tempura prawns, skewers of melon, mozzarella and ham, bacon-and-asparagus puff-pastry rolls, Parmesan baskets with ricotta and aubergines, sushi, salmon nigiri, samosas and spring rolls.

Label / history

Casa Defrà denotes the Casa dei Fratelli Cielo, the original family farmhouse at the foot of the Colli Vicentini. The family settled there in 1908 and planted its first vineyard, beginning a four-generation enterprise.
