Vineyard and terroir
The vines average 45 years of age and are cultivated biodynamically. Vineyard treatments and inputs are limited to sulfur, manure, silica and cover crops. A rock known as Tuderi rises above the vineyards and winery.
Vinification
The grapes are destemmed without pressing and macerated in cement vats with no added sulfur. Maceration lasts from three to ten days, depending on the character of the must. The wine is bottled without fining or filtration.
Ageing
The wine rests for two to three years in small concrete tanks.
