Vineyard and terroir
The grapes come from two vineyards, each with its own microclimate, exposure and terroir: one in the municipality of Roddi and one in the municipality of La Morra.
Vinification
Around 70% of the grapes are destemmed and crushed. The remaining berries are macerated for 12 days in tanks filled with carbon dioxide, which brings out aromas of ripe fruit and cherries. Alcoholic fermentation is slow, at a controlled 28–30 °C. Malolactic fermentation takes place in stainless steel tanks, softening the acidity and enriching the aroma.
Ageing
After fermentation the wine rests 12 months in stainless steel tanks, then a further 6 months in French oak barrels.
Tasting profile
Elegant and fruit-forward, with lively acidity and subtle herbal notes. The aroma combines fruit, flowers and juniper, which add depth.
Serving and pairing
Best with meat dishes, game and aged cheeses.
Label / history
An updated version of Diego Morra's Langhe Nebbiolo. "Il Sarto" means "the tailor", a name chosen for two reasons. First, like a tailor joining fine fabric pieces into a harmonious dress, the wine stitches together the terroirs of Roddi and La Morra. Second, it marks the partnership of Diego Morra and Francesca, who was born in the Biella area of northern Piedmont, a region known since 1800 for its weaving tradition and fine fabrics sold worldwide. The name nods to those traditions.
