Vineyard and terroir
The grapes are organically grown in Bolgheri on the Tuscan coast, at 150 metres above sea level. The vineyard has sandy, stone-strewn soils and lies close to a pine forest; the estate’s soils are also characterized as volcanic. Coastal breezes cool the grapes and help prevent overripening.
Grapes
Cabernet Sauvignon is the dominant variety in the blend.
Vinification
Each variety is harvested when it reaches optimal ripeness. Spontaneous fermentation with native yeasts takes place in truncated-cone concrete vats at a controlled temperature of around 28 °C for approximately 13 days.
Ageing
The wine matures for 24 months in large oak barrels, followed by three months in bottle.
