Vineyard and terroir
Enrico Fossi’s 12 hectares of vineyards lie at around 80 metres above sea level in Signa, a few dozen kilometres west of central Florence. The site has a warm microclimate and limestone soils with thin layers of chalk. The vines average 10 years of age.
Vinification
Fermentation takes place in wooden barrels and steel tanks. The wine undergoes malolactic fermentation and is filtered.
Ageing
The wine matures in oak barrels for 20–24 months.
Tasting profile
The bouquet is notably aromatic.
Label / history
The label carries the Italian saying “Cosa fatta capo ha,” translated as “What is done is finished.” Fossi names his wines and designs an individual label for each, using sayings, quotations and aphorisms intended to reflect the wine’s history and character. The winery produces 30,000–50,000 bottles annually, varying with the weather and each vineyard’s harvest.
