Vineyard and terroir

The estate’s 12 hectares of vineyards lie in Signa, several dozen kilometres from central Florence, at around 80 metres above sea level. The site has a warm microclimate, limestone soils with thin layers of chalk, and vines averaging 10 years of age.

Vinification

Fermentation takes place in wooden barrels and steel vats. The wine undergoes malolactic fermentation and is filtered.

Ageing

The wine matures in oak barrels for approximately 20–24 months.

Tasting profile

Rich and full-flavoured, with an intense aroma of flowers, minerals, honey and limestone. Bottle ageing gradually gives it a rounder, more clearly defined character.

Label / history

The label bears the words “Per vincere ci vogliono i leoni”, taken from an Italian song from the Second World War and meaning “To win, you need lions.” Enrico Fossi names his wines and designs an individual label for each, using sayings, quotations and aphorisms that reflect its story and character. The winery produces 30,000–50,000 bottles annually, depending on the weather and the harvest from each vineyard.
