Vineyard and terroir
Garganega is grown in vineyards trained to the Veronese pergola system on clay-rich soils of volcanic origin. The current profile describes 10 hectares at 150 m above sea level, with 30-year-old vines planted at 2,800 vines per hectare. The technical sheet describes 14 hectares at 150–250 m, an average vine age of 25 years and a density of 3,500 vines per hectare; its stated yield is 8,000 L/ha.

Vinification
The grapes are picked by hand into 10 kg crates. The current profile places harvest in the first two weeks of September, while the technical sheet specifies late September and adds that the fruit is transported and processed on the same day. Fermentation and maturation take place in stainless-steel vats.
Technical data
The technical sheet gives annual production as 65,000 bottles and an ageing potential of 12–18 months.
Tasting profile
Pale straw yellow with very light reflections in the current profile; the technical sheet describes straw yellow with greenish reflections. The aroma is intense and focused, combining white flowers, citrus, sage and tomato leaf. The technical sheet additionally emphasizes minerality, yellow-fleshed fruit, fine herbs and nettle. Citrus and white stone fruit shape the palate, supported by gentle saline character. The technical sheet presents it as structured and fresh, with exotic-fruit nuances and a delicate mineral quality.
Serving and pairing
Serve at 10–12 °C. Suitable as an aperitif and with starters, mild cured meats, young creamy cheeses, shellfish, raw fish, white fish, sushi and sashimi. Its salinity also complements fried calamari or baby octopus.
