Vineyard and terroir
The selected fruit comes from Fonzone’s own vineyards in Irpinia. Fruit and olive trees, oaks and meadow grasses grow among the vines.
Grapes
The grapes are selected before vinification.
Vinification
The grapes are harvested by hand and taken directly to the winery. After destemming and gentle pressing, fermentation and maceration take place in stainless-steel tanks for 15–20 days.
Ageing
The wine matures in wooden barrels for 12 months.
