Vineyard and terroir
The Cabernet Sauvignon comes partly from well-aerated hillside vineyards in Oltradige at approximately 400 m and partly from the warmest sites in western Bassa Atesina. The latter vineyards lie at around 300 m on deep, sandy soils.
Grapes
Cabernet Sauvignon.
Vinification
The grapes are picked by hand into small containers to avoid excessive pressure. They are destemmed, then undergo a slow, gravity-assisted must fermentation lasting 15–20 days in stainless-steel tanks.
Ageing
Malolactic fermentation and 18 months of maturation take place partly in large wooden barrels and partly in barriques. The wine subsequently matures for another six months in bottle before release.

Vintage 2023. Alto Adige DOC. Yield: 56 hl/ha. Alcohol: 13.5% vol. Total acidity: 5.72 g/L. Residual sugar: 1.0 g/L. Ageing potential: 8 years.
Tasting profile
Deeply coloured and full-bodied, with a spicy bouquet of ripe fruit. The palate combines persistence and elegance with a rounded, fine-grained tannic frame.
Serving and pairing
Serve at 16–18 °C. Pair with red meats, game or spicy cheeses.
