Vineyard and terroir
The Sauvignon comes from well-aired hillside vineyards in the Oltradige at 400–500 m. The mineral-rich soils consist of glacial moraine material over volcanic porphyry. The influence of the Eastern Alps contributes to the wine’s intense, characteristic bouquet. Yield is 56 hl/ha.
Grapes
100% Sauvignon.
Vinification
The grapes are harvested by hand and carried in small containers to prevent excessive pressure. Gentle whole-cluster pressing is followed by must clarification through natural sedimentation. Alcoholic fermentation takes place in stainless-steel tanks at controlled temperature. Malolactic fermentation is avoided.
Ageing
The wine matures for 6 months on the fine lees in stainless-steel tanks.

Vintage 2025. Alto Adige DOC. Alcohol: 13.5% vol. Total acidity: 6.28 g/L. Residual sugar: 1.0 g/L. Ageing potential: 5 years.
Tasting profile
An intense bouquet includes elderflower and gooseberry nuances. The palate combines an elegant frame and fine consistency with vibrant freshness, a flavoursome mineral quality, firm structure and persistent length.
Serving and pairing
Serve at 10–12 °C. Pair with white-fleshed fish, asparagus and other spring vegetables.
