Vineyard and terroir

Selected Pinot Bianco comes from well-aired hillside vineyards in the Oltradige at 450–550 m. The 2025 information identifies the crus “Girlan” and “Eppan Berg”. Soils vary from clayey limestone to volcanic porphyry, a combination that shapes the wine’s character. Yield is 56 hl/ha.

Grapes

100% Pinot Bianco.

Vinification

The grapes are harvested by hand and delivered in small containers to prevent excessive pressure. Gentle whole-cluster pressing is followed by must clarification through natural sedimentation. Fermentation takes place at controlled temperature: 40% in stainless-steel tanks and 60% in large 50 hl oak barrels. A portion in oak proceeds through malolactic fermentation.

Ageing

The wine remains on its fine lees for 7 months.

Tasting profile

Delicate and fresh while retaining fullness, with crisp apple nuances and an elegant mineral character. Pinot Bianco is the winery’s most widely planted white grape variety.

Serving and pairing

Serve at 10–12 °C. Its versatile profile suits antipasti, hors d’oeuvres and delicate fish dishes, and it can also be served as an aperitif.
