Vineyard and terroir
The fruit comes from the estate’s Vigna Bosco in the municipality of Bronte, on the northwestern slope of Mount Etna. At 1,200 metres above sea level, it is Etna’s highest vineyard and the only vineyard in the surrounding area. The vines are more than 100 years old and grow in volcanic soil amid wild countryside and extensive deciduous forest. Vineyard work is carried out by hand and with a mule; copper and sulfur are used only when necessary.
Vinification
The grapes are harvested entirely by hand, usually from late October through the first ten days of November. Whole bunches are pressed directly, after which the juice settles for 30 hours. Fermentation with native yeasts lasts 16 days. The wine is filtered only during bottling, with no sulfur dioxide added.
Ageing
The wine ages for five months in stainless-steel tanks. It is bottled in May following the harvest, in accordance with the lunar calendar.
Tasting profile
Delicate and fruity, with energy and a mineral character derived from the volcanic soil.
Label / history
The name Vinudilice refers to the forest surrounding Vigna Bosco, where holm oak is the dominant tree. Holm oak is called “Ilice” in Sicilian, making the name mean “Wine from the Oak Grove.”
