Vineyard and terroir
The Weissburgunder grows on east-facing slopes in Appiano, at 500–600 m above sea level. The clay-limestone soils also contain gravel. The vines are about 20 years old on average.
Vinification
Harvest takes place in mid-September. Fermentation lasts two weeks in stainless steel tanks, and the wine does not undergo malolactic fermentation.
Ageing
The wine rests on fine lees for 6 months.

Label / history
The Niedrist winery was officially established in 1870. Ignaz Niedrist inherited the family vineyards and began bottling and selling wine in 1989. The estate makes only 25,000–30,000 bottles a year from 8 ha of vineyards in total. Its 5 ha of white grapes (Sauvignon, Weissburgunder and Riesling) surround the winery and cellars on Ruung Hill at 500 m. The red Lagrein grows on Berger Gai in Gries. That vineyard officially belongs to Ignaz's wife's parents, so that wine carries a different label and brand.
Ignaz was one of the first winemakers in Girlan to replace the traditional South Tyrolean Pergola, which gives high yields with little labour, with the more labour-intensive Guyot system, which gives lower yields but better-quality grapes. He also gave up the local Vernatsch in favour of varieties he found more complex and interesting. His wines reflect the local terroir and microclimate, made with modern winery technology.
