Vineyard and terroir
The grapes come exclusively from the approximately 4.5-hectare Peratara vineyard, situated at 550–570 m above sea level. Its altitude produces pronounced temperature differences between day and night. The marl-and-limestone soil is particularly rich in stony skeletal material of Cretaceous origin. Peratara means “stony ground” in the Veneto dialect.

Corvina, Corvinone and Rondinella.
Vinification
The best bunches are selected and harvested by hand, with picking continuing until late September. After destemming and gentle crushing, fermentation takes place in stainless-steel tanks at a controlled 22–24°C. Maceration lasts 10 days, accompanied by délestage and periodic daily pump-overs.
Ageing
The wine matures for 2 years across large casks, tonneaux, barriques and amphorae, followed by a further year in bottle.

Tasting profile
Bright garnet with ruby-red nuances. Aromas of cherries, violets and forest berries are joined by complex herbal notes and a light touch of spice. The palate is full and rich, with a velvety structure shaped by fully integrated tannins. Limestone-derived minerality and acidity sustain the aromas, leading to a persistent, fresh and precise finish.
Serving and pairing
Pair with first courses dressed in rich sauces, roasts, white meats, stews, monkfish cooked in red wine and moderately aged cheeses. It can also accompany spiced Asian dishes and traditional Veronese boiled meats.
Label / history
The wine takes its name from its vineyard: Peratara denotes stony ground in the Veneto dialect, referring to the skeletal marl-and-limestone soil.
