Vineyard and terroir
The Cabernet Sauvignon and Cabernet Franc come from family-owned vineyards in the hills of Montello.
Grapes
85% Cabernet Sauvignon and 15% Cabernet Franc.
Vinification
The grapes are harvested exclusively by hand in early October. Following crushing and destemming, the must is cooled to approximately 10 °C and held at that temperature for 4–5 days. Maceration and alcoholic fermentation take place in stainless-steel vats for approximately 15 days at 25 °C, with pump-overs. After alcoholic fermentation, the wine is drained and separated from the skins.
Ageing
The wine matures in stainless-steel vats for approximately 7–8 months. Bottling takes place in late spring or early summer of the year following the harvest, followed by approximately four months of bottle ageing.
