Vinification
Made by the historic practice of secondary fermentation in the bottle. Fermentation restarts spontaneously as temperatures rise and the yeasts resume converting the residual sugar. The wine remains on its natural sediment, without disgorgement described.

Alcohol: 11% vol. Residual sugar: 1–2 g/L. Acidity: 5 g/L. Bottle pressure: 3 atm. Format: 0.75 L.
Tasting profile
The fine deposit produces a characteristically hazy straw-yellow appearance and contributes aromas of crusty bread, butter and dried fruit. The palate is dry, crisp and fresh, with subtle, lively and delicate bubbles. Although immediately approachable, the wine becomes increasingly complex with time and across vintages; its sediment helps preserve its fragrance.
Serving and pairing
Serve without decanting. A gentle movement of the bottle can distribute the natural haze so that each diner receives a similarly cloudy glass. Its versatility accommodates both sophisticated dishes and traditional, rich food.
Label / history
Incalmo was created by the Ruggeri siblings as a family wine intended to go beyond denomination boundaries. It revives the old Treviso countryside tradition of spontaneous bottle refermentation, the method once used to produce lightly sparkling wines before modern sparkling-wine techniques.
The label was designed by Valdobbiadene artist Aldo Rebuli. It depicts a symbolic embrace between the vine and human labour, expressing a second generation rooted in the tradition of Prosecco Superiore while pursuing experimentation; Incalmo is presented as the first direct ambassador of that approach.
