Vineyard and terroir
The vines grow in Friuli Colli Orientali on Eocene marl and sandstone soils, which give the wine subtle minerality and depth. Sauvignon Blanc reached Friuli in the Habsburg era, bringing a distinctive French influence to the region.
Vinification
The grapes are harvested by hand in the first half of September. They are gently destemmed and given a short maceration to bring out as much aroma as possible. After gentle pressing and natural clarification, the must ferments in temperature-controlled stainless steel tanks.
Ageing
The wine rests on its lees for several months, developing a creamy texture, complexity and firm structure. Further ageing in the bottle brings these qualities together and helps the wine keep its freshness and character over time.
