Vineyard and terroir
The grapes come from the hilltop "Zuc" vineyard in Togliano. Maritime influence, the mountain range and cold air arriving from the Balkans create a microclimate suited to white grape varieties.
Grapes
The grapes are selected for their concentration of flavour and aroma.
Vinification
After harvest, the grapes are chilled with dry ice and pressed pneumatically. Cold maceration precedes temperature-controlled fermentation in stainless-steel and glass vessels.
Ageing
The wine rests briefly in stainless-steel tanks.
Tasting profile
The 2011 is balanced and well structured, with a distinctive, deep aroma. The palate is soft, elegant and fruity, in harmony with the nose.
Label / history
The "Zuc di Volpe" range was first released in 1990 and is produced only in selected vintages.
