Vineyard and terroir
The Cabernet Sauvignon comes from Tenuta RoncAlto at Ruttars in the municipality of Dolegna del Collio. The vineyard has marl-and-clay soils, a planting density of 8,000 vines per hectare and Guyot training.
Grapes
100% Cabernet Sauvignon.
Vinification
The grapes are harvested entirely by hand into crates and gently destemmed. Fermentation proceeds on the skins for 18 days at a controlled temperature of 23°C.
Ageing
The wine matures for approximately 16 months in barriques maintained at a constant 16°C. Bottling is followed by a long period of bottle ageing.
Tasting profile
Deep ruby red. The nose is dominated by forest-fruit aromas accompanied by elegant spicy notes. The palate has good structure and supple tannins, leading to a long, persistent finish.
Serving and pairing
Serve at 18°C. Suited to substantial dishes based on beef, pork or game, as well as mature cheeses.
