Questo vino
Vineyard and terroir
Cavagino is made from a small, individually vinified Vermentino vineyard on the hills of Luni, in the Colli di Luni and Castelnuovo Magra area. The parcel lies at approximately 250 metres above sea level and benefits from a distinctive microclimate. Its soil is rich in skeletal material, with a substantial presence of macigno. Low vineyard yields contribute to the concentration of the fruit.
Grapes
Vermentino. Cavagino was among the first single-vineyard Vermentino crus developed in the area. The character and quality observed from the earliest harvests led to the parcel being vinified separately.
Vinification
The grapes undergo cold skin maceration for approximately 12 hours followed by gentle pressing. Sixty percent of the must ferments in stainless steel at controlled temperature; the remaining portion ferments in barriques.
Ageing
The wine remains on its fine lees in stainless-steel tanks for approximately six months.
Technical data
Colli di Luni DOC Vermentino. Alcohol: 14% vol.
Tasting profile
The colour is an intense, brilliant straw yellow. Ripe apricot, peach and tropical fruit lead the aroma, framed by acacia honey, Mediterranean scrub, candied orange and chamomile. The palate is rich, complex and balanced, with acidity and savouriness countering a warm, creamy texture. The broad, persistent finish recalls ripe fruit and closes with a saline accent.
