Vineyard and terroir
The vineyards lie near a lake, where grey herons sometimes stop.
Vinification
The grapes are destemmed and macerated for 36 hours on the stems under CO2. After gentle pressing, the juice goes into 225-litre barrels of acacia and French oak. Alcoholic fermentation lasts 20 days at cellar temperature, with daily bâtonnage.
Ageing
The wine ages for 6 months in the acacia and oak barrels, with the lees stirred weekly. It then moves to steel tanks for static decanting. After bottling it rests a further 2 months at 14 °C before release.
Label / history
The wine grew out of the Abbona family's wish to create something as perfect as a wine they had discovered in France. On returning to Italy they began work on their own version from Viognier. The name Cinerino refers to the grey herons that sometimes stop at the lake near the vineyards.
