Questo vino
Vineyard and terroir
A 100% Nebbiolo Barolo combining 65% Cerretta from Serralunga d’Alba with 35% Roncaglie from La Morra. Cerretta lies on iron-rich calcareous sands of the Lequio Formation. Roncaglie is rooted in Sant’Agata Fossili marls, with a higher proportion of clay and silt.
Vinification
Following summer thinning, the grapes are picked by hand during the second ten days of October and transported in perforated 20 kg crates. Each vineyard is vinified separately to tailor extraction to its character. The fruit undergoes a further manual selection on vibrating tables before destemming. Alcoholic fermentation and a 15–20-day maceration take place in temperature-controlled steel tanks with automated pump-overs and punch-downs.
Ageing
After malolactic fermentation, each lot matures separately for 30 months in large 15 hL French oak casks. The two components are blended only before bottling, followed by at least six months of bottle maturation before release.
Technical data
Alcohol: 14–14.5%.
Tasting profile
Brilliant ruby red with subtle garnet hues. The intense, rich and complex bouquet combines small red berries and cherry with violet, dried rose and sweet spices. The palate is full and substantial, with sweet, enveloping tannins and a savoury character, leading to a long, persistent finish.
