Vineyard and terroir

The fruit comes from the polyclonal Avene, Remondà and Mortizzo vineyards in Mango, Diano d’Alba and Montelupo Albese. Some vineyards contain as many as four different clones. These high-hill Alta Langa sites stand at 420–550 m above sea level on marly, calcareous soils.

Grapes

80% Pinot Noir and 20% Chardonnay.

Vinification

Harvest runs from mid-August to early September. Each variety and vineyard parcel is harvested, vinified and matured separately. After approximately two days in cold storage, the fruit is manually selected on vibrating tables and whole bunches are gently pressed in a pneumatic press. The must undergoes cold static settling and controlled-temperature fermentation, principally in steel tanks. Approximately one third of both the Pinot Noir and Chardonnay musts ferment in barriques and tonneaux, with second-use barrels preferred.

In February following harvest, the separate components are assembled into the base-wine cuvée. Light clarification and filtration precede tirage and bottling.

Ageing

Slow secondary fermentation and bottle maturation last for at least 30 months before disgorgement and packaging.

Tasting profile

Straw yellow with emerald flashes. Green apple and citrus lead the fine, distinctive bouquet, followed by hawthorn, fresh hazelnut and biscuit. The creamy, caressing perlage accompanies a balanced and persistent palate, ending with a savoury, long, clean and refreshing finish.

Serving and pairing

Structured yet elegant, it can be served as an aperitif or enjoyed throughout a meal.

Label / history

The name combines the first two letters of AVene, REmondà and MOrtizzo. In Italian, “avremo” also means “we will have,” evoking the future and a family or community united around a shared goal.
