Vineyard and terroir
The Viognier comes from two vineyards in Serralunga d’Alba and Diano d’Alba. Their loose soils tend toward limestone.
Grapes
100% Viognier.
Vinification
The grapes are harvested slightly overripe in mid-September after summer green harvesting. They are picked by hand into perforated 25 kg crates, held in cold storage for two days and selected on a vibrating table before soft pressing. After cold settling, the must is transferred into new 400-litre French oak barrels whose delicate toast is produced with hot water to preserve varietal character. Malolactic fermentation follows, together with bâtonnage on the lees for several months.
Ageing
The wine remains on its fine lees for 6–8 months in the same 400-litre French oak barrels, with periodic bâtonnage. Bottling normally takes place in June following the harvest, followed by another 6–8 months of bottle maturation.
Technical data
Alcohol: 13.5–14%.
Tasting profile
Intense straw yellow with green highlights. The persistent, fine and floral aroma features apricot and citrus, with the broader description adding yellow peach, lime, tangerine and bergamot. The palate is full, structured and harmonious, with pronounced savoriness, balance and persistence. It is intended to develop over extended ageing.

Pair with fish, shellfish, foie gras, cheese or white meat.
