Vineyard and terroir

The vineyards are in Mango, at Bricco Avene and Schiasso. The technical sheet places them at approximately 500 m above sea level, while the wine description gives 550 m for Bricco Avene. The soil has a medium texture, a sub-alkaline reaction and an adequate supply of organic matter. Altitude and the daily temperature range encourage the accumulation of aromatic precursors in the grapes.

Grapes

100% Moscato.

Vinification

After summer green harvesting, the grapes are picked by hand in mid-September into perforated 25 kg crates. They spend about two days in cold storage, undergo further selection on a vibrating table and are softly pressed. The must is cold-settled for 10–15 days in temperature-controlled stainless-steel tanks and then clarified. Fermentation converts sugar into alcohol and carbon dioxide; on reaching 5% alcohol, the temperature is lowered to stop fermentation. The naturally produced carbon dioxide remains dissolved in the wine, while approximately 140 g/L of natural residual sugar is retained.

Ageing

The wine remains in stainless-steel tanks for approximately one month and is bottled by the end of November.

Tasting profile

Straw yellow, with intensity varying by vintage. The nose is intense, aromatic, fruity and persistent, with sage and citrus notes and notable aromatic complexity. Natural sweetness is balanced by low alcohol and gentle acidity, producing a fresh, harmonious palate.
