Vineyard and terroir

Paiagallo is an Additional Geographical Mention in the municipality of Barolo, characterized by gentle, rounded contours. The vineyard has a southeast-to-east exposure and grows on marly, sandy soils. Its pedoclimatic conditions favor structure, aromatic intensity, and pronounced elegance. The vines were planted in the mid-1980s and are trained using the Guyot system.

Grapes

100% Nebbiolo.

Vinification

The grapes macerate on their skins in temperature-controlled stainless-steel tanks for 20–25 days. Vinification begins with a 48-hour cold maceration at 10°C. Extraction is deliberately gentle, with approximately two pump-overs each day. After racking, malolactic fermentation takes place in stainless steel.

Following maturation, the wine is decanted into stainless steel and bottled without filtration or clarification.

Ageing

Around December, the wine is transferred to a 30 hL oak cask, where it ages for 24 months.

Tasting profile

Light ruby red with subtle garnet nuances. The aroma is strongly fruit-led yet delicately harmonious, with strawberry and raspberry notes. The palate is fine and elegant, showing good persistence and a finish defined by notably soft tannins.

Serving and pairing

Serve at 16–18°C. Its initial freshness can be enjoyed first, followed by the gradual development of its aromas as the wine warms in the glass.

Ageing potential

Already approachable, with the potential for great longevity. Available in standard bottles and magnums.
