Vineyard and terroir
The vineyards lie on high hills in Piedmont, in an area between the Ligurian Sea and the Apennines, which helps the grapes reach concentration and purity. The soils are clay and marl, which retain moisture and heat well, so the grapes ripen evenly and the wine gains a subtle mineral note. Excess bunches are thinned out during the summer.
Grapes
Cortese is naturally high in acidity and highly sensitive to terroir.
Vinification
The grapes are harvested by hand. Winemaking includes partial cold maceration followed by gentle pressing, aimed at a balance of sweetness and acidity, a complex flavour and an appealing aroma. Fermentation uses native yeasts and lasts 12–15 days at 16–18 °C in steel tanks.
Ageing
The wine rests on its lees for 3–4 months in stainless steel tanks.
Tasting profile
Clean and bright in its freshness, with an expressive character, a subtle mineral note and good balance between sweetness and acidity. With time it becomes softer and rounder in texture.
Serving and pairing
It can be enjoyed young, and its balance also allows it to develop over many years.
